Cheese - Moulis Goat and sheep
Produced near the Ariege Region, in the Pyrenees Mountains, which is known mainly for their production of sheep's milk cheese.Though Le Moulis style of cheese is available in goat and sheep milk varieties, cow's milk is the most popular and considered the most delicious.
The natural rind is light brown in color and during early stages of production is washed every other day in salt water. "Natural" rind refers to the fact that there are no added yeasts or molds, and those that develop are naturally occuring from the environment, "airroir"
