Langres Chalancey cheese

Langres is a French soft cheese made exclusively from cow's milk and rennet in the plateau of Langres, in the region of the Champagne Ardenne.

Very similar to the Epoisses cheese, this smear ripened washed rind cheese is normally produced in small dairy farms.

It has a characteristic conical shape with a central depression, called fountain. 

The aging proceoss of Langres cheese takes up to three months in damp cellar, where it undergoes frequent cleaning with brine and Annatto which give the crust the typical yellow-orange colour. 

It has been awarded the Appellation d'origine contrôlée (AOC) since 1991.
