Cheese - Brie
This raw milk cheese is hand-moulded. It is selected from amongst the thickest Bries which makes it especially creamy. Its white rind becomes progressively covered with red spots during its extra long ripening period. The cheese is ripened for at least 7 weeks on rye straw according to ancestral methods.
